THE first British chef to win a Michelin Star in Spain, the Palma-based Marc Fosh, is set to collaborate with leading airline Lufthansa and LSG Sky Chefs in creating signature menus for the airline's renowned “Star Chefs” premium dining programme in 2010/11.

Since its inception in 2000, the airlines award-winning program has featured in-flight creations by such culinary luminaries as Thomas Keller (New York/Napa Valley, CA), Paul Bocuse (Lyon, France), Daniel Boloud (New York), Santi Santamaria (San celoni, Spain) and, Dieter Müller (Cologne, Germany).

Passengers flying on Lufthansa first class and business class flights from Germany to nearly 200 international destinations will be able to sample some of Marc Fosh's Mediterranean creations with a Spanish touch including Sea Bass a la Mallorquina and Chocolate & olive oil truffle with a red pepper-raspberry jelly. “The dishes I have created for Lufthansa are mainly taken from both our “Simply Fosh Restaurant” and the new “Tasca de Blanquerna” menus with contemporary Spanish influences,” said Chef Fosh who has written a weekly cookery feature for the Bulletin for the past decade. “VERY EXCITED” “I am very excited about the prospect of working with Lufthansa, whose inflight culinary programme is outstanding and has featured some of the very best chefs in the world.” Lufthansa is due to start production of Fosh's menus in November of this year.
