Your wife is really lucky to have a husband who enjoys cooking for her. I am in the same situation myself and often cook quick pasta dishes at home. The most important thing is to use a good quality fresh pasta. It can be frozen and cooked straight from the freezer and cooks faster and tastes better than dried pasta. Buy some sundried tomatoes in olive oil and a jar of basil pesto. These keep well in the fridge and are great standby items to have kicking around. Boil your pasta until it is just cooked and al'dente. Warm some chopped sundried tomatoes in a little olive oil and add a big spoonful of basil pesto. Add some freshly cooked seafood of your choice or a tin of tuna and add the pasta. Season with salt and pepper, sprinkle with grated Parmesan and serve. It's very quick, very simple but tastes great.
