THE coctel-degustacion developed by the Majorcan chef Tomeu Caldentey and offered on the Balearic Government's stand at the start of the MEDEX (Mediterranean Experience) food fair in Miami, has won first prize in the Best Designer Food category. Caldentey's menu was developed with five star products and included dishes like trampo with Mahon cheese and apple, pa amb oli with Ibizan goat's cheese, Majorcan cheese with apricots and figs from Porreres, and lobster stew, amongst others. The Balearics had a stand of 250 square metres to promote the food products of the islands.
The fair closed with a demonstration of cookery by eight chefs from various points of the Mediterranean, among them Caldentey, who prepared Soller prawns with trampo.
